Ingredients
Yield: 6 servings
- 4 cups cabbage
- 2 cups carrots, shredded
- 1 cucumber, thinly sliced
- 3 stalks of celery, thinly sliced
- 1 cup fresh parsley, roughly chopped
- 1/2 cup roasted pumpkin seeds
Dressing
- 2 limes or lemons, zest and juice
- 1/3 cup olive oil
- Salt and pepper to taste
- 1 tablespoon honey or maple syrup
- 1 garlic clove, minced
Instructions
- Combine all dressing ingredients, mix well. Set aside.

Prepare all vegetables according to ingredient instructions. Combine all of the vegetables in large bowl. Pour dressing over salad, toss well.
