This summer’s harvest is already making a powerful impact. So far this year, we’ve distributed over 1.3 million servings of fresh produce to those facing food insecurity. This milestone is made possible through the dedication of our volunteers and the support of several incredible partners who share our mission of healthy food access for all. Together, we are ensuring that nutritious, farm-fresh food reaches families, seniors, and children who need it most.
But the need is only growing. Across New Jersey and beyond, demand for food assistance is on the rise. Many families are struggling to keep up with the rising cost of living including food prices which remain high, especially for essentials like fresh food.
These rising costs are hitting vulnerable communities the hardest, especially those already grappling with economic instability. At a time when healthy food access is more critical than ever, our work and your support has never been more urgent.
As we head into the heart of summer, the fields at America’s Grow-a-Row are buzzing with color, texture, and flavor. Our farmers and volunteers are hard at work harvesting some of the most iconic and nutritious vegetables of the season. These in-season crops are bringing vitality and nourishment to the communities we serve. Here’s a look at what’s growing and being harvested right now!
Cucumbers: Crisp, Cool, and Refreshing
Few things scream summer like a freshly picked cucumber. Whether you’re slicing them into a salad or snacking on them raw, cucumbers are a summer staple. Their quick-growing nature means we’re harvesting them almost daily, and their high water content makes them especially refreshing during the warmest months. Plus, they’re packed with vitamins K and C, antioxidants, and hydration.
Zucchini: Versatile and Abundant
Zucchini is one of the most generous crops of summer, and we’re harvesting zucchini in abundance right now! This summer squash is versatile: it can be grilled, sautéed, spiralized into noodles, baked into breads, sliced and baked, or shredded into veggie burgers. Its mild flavor makes it a great base for all kinds of meals, and its nutrient profile (rich in fiber, manganese, and vitamin A) makes it a healthy choice, too.
Eggplant: The Unsung Hero of Summer
Eggplant may not get as much attention as tomatoes or corn, but it’s one of our most beautiful and delicious summer vegetables. From deep purple globes to lighter striped varieties, eggplant is coming in strong this season. It’s a staple in Mediterranean, Middle Eastern, and Asian cuisines, and it soaks up flavor beautifully whether grilled, roasted, or braised. And it’s not just delicious: eggplants offer fiber, potassium, and antioxidants like nasunin, which supports brain health.
Peppers: Sweet to Spicy and Everything in Between
Our bell pepper and banana pepper plants are bursting with color this time of year. Peppers add crunch and flavor to countless dishes and are one of the richest sources of vitamin C you can eat. We’re thrilled to see such a strong harvest this year, and our peppers are being distributed to communities where fresh produce is often hard to come by.
The Power of In-Season Eating
Eating produce at its peak not only tastes better, but it’s also better for you and the environment. In-season vegetables are more likely to be local, fresh, and nutrient-rich. At America’s Grow-a-Row, we’re proud to grow, harvest, and deliver this bounty directly to those who need it most.
This season, as you shop for produce or prepare meals, keep an eye out for these in-season gems. Better yet, volunteer with us and experience the joy of harvesting them firsthand!
